Whenever I used to read fantasy or science fiction, I always felt like the endings were missing something. I'd been thinking about it a lot lately too—if I wrote science fiction or fantasy in the future, how should I end it?
I also thought Naruto's ending was pretty bad. If it had ended around the Pain arc as the author originally planned, it would have been quite good.
Personally, I liked stories where the power levels weren't especially exaggerated, like early Naruto. There were varied ways to attack; simply put, high offense and low defense made it easier to imagine.
Kakashi's battle against Zabuza, the Third Hokage fighting Orochimaru during the Konoha Crush, and the genin versus Gaara's team.
The Sound Four's segments had that great feeling of intelligence combined with tactics.
