Before long, all the youtiao in the wok had puffed up, filling the entire wok. Both sides had fried to a beautiful golden color. Su Chen placed the fried youtiao on the oil-draining rack beside the wok to drain.
If he did not drain the youtiao, there would be a lot of oil on them. The oil would be absorbed into the flour, and eating them would mean consuming too much oil, which could easily lead to problems such as high blood lipids and obesity.
After this batch of youtiao was done, Su Chen continued frying. Since he had made four jin of youtiao dough, he could fry a great many youtiao.
When Su Chen finished frying the last batch, Tuantuan and Lele walked to the kitchen doorway. The two little ones were especially obedient and did not immediately run over to watch Su Chen fry the youtiao.
Instead, they stood at the kitchen entrance, looking in Su Chen's direction as they asked, "Daddy, are the youtiao done? Can we come over and look now?"
Lele said, "Daddy, we were very obedient. We didn't go into the kitchen. We're just standing at the doorway, so this should be safe, right?"
Su Chen turned to look at the two little ones and said, "Stand there for a little longer. Daddy will be done frying all the youtiao very soon."
After saying that, Su Chen continued turning the youtiao with long Chopsticks. Since he was frying food, the Chopsticks he used were longer than ordinary dining Chopsticks, roughly twice their usual length.
Using them to fry youtiao prevented oil from splattering on him. Although Su Chen was skilled enough in the kitchen not to get splattered by oil, using long Chopsticks to turn the youtiao also kept his hands from getting burned.
