The origins of the Knights of the Round Table were legendary in their own right. When Emperor Arthur first emerged into the world, he wanted to unite it under his rule. Knowing he could not accomplish that alone, he sought out the twelve most renowned heroes of the time and won them over to his side.
As for the process, it was much like an RPG: the hero needed companions to defeat the demon king, so he sought them out. For one reason or another, those companions refused to join him. Then the hero resolved their troubles, and, moved by his actions, they joined his party.
That was essentially how it went.
