The Undying Lord had his reasons for using his Devouring Soul to perform a Body Seizure of Qin Hao while his Undying Soul held off Gang Juezi.
The Devouring Soul's strength lay in Devouring, which made it invaluable for a Body Seizure. As for his Undying Soul... the Undying Lord had survived so long as a Remnant Soul largely because he cultivated the Way of Immortality.
In other words, he was confident he could withstand Gang Juezi even if Gang Juezi regained his peak strength.
