Heath had no idea what Professor Oak was thinking. He was busy preparing the pork knuckles. To be honest, he had never roasted pork knuckles before. After all, they were usually braised, and braised pork knuckles tasted very good, but he did not know what roasted ones tasted like. He had originally planned to have Charizard come out and roast the three pork knuckles directly. With Charizard around, Heath did not think roasting them would be much trouble. Besides, pork knuckles were so large that getting seasonings rubbed on the outside to penetrate them would not be easy, so he had simply intended to roast them first and prepare the seasonings afterward.
That way, they could dip the pork knuckles straight into the seasonings as they ate, or cut them up first and then dip them. It was convenient and simple, required no particular skill, and was easy to prepare.
That really had been Heath's plan, but after giving it some thought, he abandoned the idea. He had another approach in mind, inspired by the grilled pig trotters he had eaten before.
Grilled pig trotters were one of the more distinctive offerings on snack streets, and they cost a little more than ordinary snacks. They generally came in round and pointed cuts. The pointed cut was the section with the front of the trotter attached. It had more bones, and a serving generally cost eleven or twelve. The round cut came from a little farther up the trotter, where there were fewer bones and more meat, though the bones were larger. A serving cost nine or ten. But these trotters clearly did not have all that much meat, so why did they still sell so well? Naturally, it was because they tasted good.
