Heath actually preferred to call the so-called roasted goose rice "roast goose rice," but everyone in the Pokémon world called it roasted goose, so he simply went along with the crowd and called it roasted goose rice too. As the name suggested, this dish used roasted goose as its main ingredient, with everything else merely an accompaniment. Although roasted goose was simple to prepare, there were still tricks to making it taste good, and that meant first discussing duck and goose as two different ingredients.
Although ducks and geese looked quite similar, and people seeing them for the first time might even confuse them, they were actually different. Generally speaking, ducks were leaner, while geese had a higher body fat percentage and fattier meat. There was a difference when eating them roasted, too. Duck meat came apart in strands, giving it a distinctive, satisfying texture, whereas goose meat generally tasted somewhat fatty, though not so much that it became cloying. The biggest distinction, however, was that goose usually cost much more than duck.
A pound of duck and a pound of goose sold for different prices. A whole roast duck might cost only thirty, but a whole roast goose would cost over a hundred, perhaps even more. This was another important distinction between ducks and geese; they really were very different.
Ducks were also generally docile and easy to catch in the countryside, but geese were another matter. These creatures were fierce, and it was common to see a single goose chasing a whole pack of unruly children. They could be considered the village bullies. Of course, a butcher accustomed to slaughtering geese had no trouble with them at all. When one came over, the butcher could simply reach out, grab its neck, and carry it to the chopping block
